I think there is one game (either out, or coming out), where you can play PC vs Xbox 360. It's something that's been allowed only recently, now that Microsoft has made a PC equivilent of Xbox live.

As a general rule, Xbox games don't have servers. Players matchmake with each other over Xbox live, and one of the players acts as a server behind the scenes.

In the future, there might be more games that allow PC vs Xbox play, now that it's allowed, but I doubt that very many games will do it, for the joypad reason you just mentioned.
